Early June 2005

New Local Products

Every week we’re finding more and more products to carry, and getting even more requests. As it becomes logistically possible for us to carry these products, we’ll let you know. This issue of the news is about some of the new folks we’re working with. All of the products listed here are available for delivery starting in June!

Bohemian Ovens Bread

Bohemian Ovens was started by Mike Hable almost eight years ago after his 27-year career in dairy farming. Mike continues on his mission of making “good bread.” Each loaf is hand crafted and baked in their big wood-fired brick oven which the Hable brothers designed and built themselves up in Bloomer. These breads are made with high quality grains and flours and contain no added fat, dough enhancers, food coloring, or preservatives. They are not sliced and should be refrigerated to retain freshness.

Durand boasts one of the finest cheese plants in the State of Wisconsin. Eau Galle cheese produces over 9 million pounds of Parmesan and Romano cheese each year. Leo Buhlman, our founder, apprenticed for 8 years as a cheesemaker in Switzerland before coming to the United States in 1926. Leo purchased the Eau Galle Cheese Factory in 1945. His hard work, honesty, and attention to quality is shown in the cheese produced. Leo passed down the knowledge and skills of cheesemaking to his son who operates the plant today. These hard cheeses come in wedges with weights between one half and one full pound. A familiar and popular cheese, parmesan can be enjoyed as a table cheese and served with meals; it also makes a great accompaniment to such fruits as sliced pears, tart apples, fresh figs, and ripe melon. Asiago is a hard, aromatic Italian cheese originally made only in the Dolomite Mountains region of northern Italy. It can be used for grating and as a table cheese. This cheese is granular, like Parmesan, but a bit more pungent in flavor. Romano, one of the world’s oldest and most favorite cheeses, comes from just outside beautiful Rome. It has a creamy white color, sharp piquant flavor, and a hard granular texture. Eau Galle Italian is another superb hard cheese, and can be used as a substitute for the others in almost any recipe.

We are now getting fresh certified organic whole grain products direct from the Hilgendorf family farm in Welcome, MN. Their specialty is hi lysine corn – which has more protein than other corn (almost as much as meat), is more digestible, and higher in essential amino acids. The corn chips are excellent, the corncake waffle mix is wheat and gluten free, and the harvest grains pancake mix (wheat, oats, rye, corn, and buckwheat) is an “award winning” blend. Eight grain hot cereal consists of whole wheat, hi lysine corn, oats, rye, sunflower seeds, flax, millet, and sesame – a supremely nutritious and delicious meal, especially when combined with some fresh cream and honey, butter, yogurt…

Please give these whole grain products a try. If we get a good response from customers we will consider carrying a full line of products from this family farm in the future.

Morsels…

The Kostkas are running a 2 for 1 special for the beginning of June – buy one package of brats, we’ll deliver two! The Kostka’s raise their pigs naturally and humanely on their family farm down near Osseo. A number of items from Sno-Pac have gone up in price, but remain an affordable organic choice. The Holstein, that white and dark chocolate caramel sandwich handmade by River Chocolate Company from fair trade chocolates and local cream and butter, has had a packaging change – they now come one to a package and the price has lowered to $2.59. Yum. Several customers have asked for contact information about our insurance agent, Mark Wise, who has been providing alternative fuel and expertise free of charge to our business. He is now working with Indianhead Insurance and can be reached at 833-7181 for your insurance needs...

Rats fed Genetically Modified corn developed abnormalities in blood and kidneys
(from the Independent UK) Rats fed on a diet rich in genetically modified corn developed abnormalities to internal organs and changes to their blood, raising fears that human health could be affected by eating GM food. The Independent has revealed details of secret research carried out by Monsanto, the GM food giant, which shows that rats fed the modified corn had smaller kidneys and variations in the composition of their blood. According to the confidential 1,139-page report, these health problems were absent from another batch of rodents fed non-GM food as part of the research project. (details and full article at: http://www.independent.co.uk/ , search for “gm corn”). You can be assured that we at Just Local Food Cooperative are concerned about your health and the long term sustainability of our farmers.  For this reason, we do not carry genetically modified products at this time.
